Ingredients
- 1.5 - grouper filets
- 1/3 cup tequila
- 1/2 cup triple sec
- 3/4 cup lime juice
- 1 teaspoon salt
- 2 large garlic cloves, crushed
- 1 tablespoon vegetable oil
- 3 - tomatoes, chopped
- 1 - onion, chopped
- 1 tablespoon jalapeno peppers, chopped
- 2 tablespoons cilantro, chopped
- 1 dash sugar
- - pepper, freshly ground
How To Make grilled margarita grouper

Step 1Place fish in a dish large enough to hold it in a single layer and combine tequila, triple sec, lime juice, salt, garlic and 2 teaspoon oil and pour over fish, rubbing all over.

Step 2Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionally.

Step 3Just before serving, combine tomatoes, onions, chiles, cilantro, sugar and salt to taste.

Step 4Heat the grill to very hot.

Step 5Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 teaspoon oil and grind pepper over the surface.

Step 6Cook on a greased grill for about 4 minutes per side or until flesh is opaque.

Step 7Meanwhile, boil marinade in saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little of it over the fish, spoon the tomato salsa alongside and serve.
