    grouper filets
  • 1/3 c
  • 1/2 c
    triple sec
  • 3/4 c
    lime juice
  • 1 tsp
  • 2 large
    garlic cloves, crushed
  • 1 Tbsp
    vegetable oil
  • 3
    tomatoes, chopped
  • 1
    onion, chopped
  • 1 Tbsp
    jalapeno peppers, chopped
  • 2 Tbsp
    cilantro, chopped
  • 1 dash(es)
  • ·
    pepper, freshly ground

How to Make Grilled Margarita Grouper


  1. Place fish in a dish large enough to hold it in a single layer and combine tequila, triple sec, lime juice, salt, garlic and 2 teaspoon oil and pour over fish, rubbing all over.
  2. Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionally.
  3. Just before serving, combine tomatoes, onions, chiles, cilantro, sugar and salt to taste.
  4. Heat the grill to very hot.
  5. Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 teaspoon oil and grind pepper over the surface.
  6. Cook on a greased grill for about 4 minutes per side or until flesh is opaque.
  7. Meanwhile, boil marinade in saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little of it over the fish, spoon the tomato salsa alongside and serve.
  8. Serves 4
