- 8 - salmon filets, skin removed
- GLAZE INGREDIENTS
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons soy sauce
- 1 teaspoon lime peel, grated
- 2 tablespoons fresh lime juice
- 1 tablespoon brown sugar, dark and firmly packed
- 1 teaspoon ginger, grated
- 1 teaspoon olive oil
- 1/2 teaspoon freshly ground black pepper
- SAUCE INGREDIENTS
- 1/2 cup sour cream
- 2 cups cilantro leaves
- 2 cups mint leaves, fresh
- 1/2 cup fresh parsley
- 2 - jalapeno chile peppers, seeded and finely chopped
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
How To Make ginger glazed salmon

Step 1Make Ginger Glaze: Combine all glaze ingredients in small bowl.

Step 2Place salmon in shallow glass dish and spoon on glaze, turning to coat. (Can be made ahead. Refrigerate up to 24 hours.)

Step 3Heat broiler.

Step 4Line jelly-roll pan with foil.

Step 5Arrange salmon on prepared pan and spoon glaze on top.

Step 6Broil 4 inches from heat without turning until fish is opaque throughout, 8 to 10 minutes.

Step 7Let stand 5 minutes.

Step 8Serve with Green Herb Sauce.

Step 9Green Herb Sauce: Combine all ingredients in blender and blend until smooth, scraping down sides.

Step 10(Can be made ahead. Cover and refrigerate up to 8 hours.)

Step 11Makes 1 1/4 cups.
