    salmon filets, skin removed

  • 2 Tbsp
    fresh mint leaves, chopped
  • 2 Tbsp
    soy sauce
  • 1 tsp
    lime peel, grated
  • 2 Tbsp
    fresh lime juice
  • 1 Tbsp
    brown sugar, dark and firmly packed
  • 1 tsp
    ginger, grated
  • 1 tsp
    olive oil
  • 1/2 tsp
    freshly ground black pepper

  • 1/2 c
    sour cream
  • 2 c
    cilantro leaves
  • 2 c
    mint leaves, fresh
  • 1/2 c
    fresh parsley
  • 2
    jalapeno chile peppers, seeded and finely chopped
  • 1 Tbsp
    fresh lime juice
  • 1/4 tsp
  • 1/2 tsp

How to Make Ginger Glazed Salmon


  1. Make Ginger Glaze: Combine all glaze ingredients in small bowl.
  2. Place salmon in shallow glass dish and spoon on glaze, turning to coat. (Can be made ahead. Refrigerate up to 24 hours.)
  3. Heat broiler.
  4. Line jelly-roll pan with foil.
  5. Arrange salmon on prepared pan and spoon glaze on top.
  6. Broil 4 inches from heat without turning until fish is opaque throughout, 8 to 10 minutes.
  7. Let stand 5 minutes.
  8. Serve with Green Herb Sauce.
  9. Green Herb Sauce: Combine all ingredients in blender and blend until smooth, scraping down sides.
  10. (Can be made ahead. Cover and refrigerate up to 8 hours.)
  11. Makes 1 1/4 cups.
