fried salmon over cheesy polenta with mango salsa
This is an easy elegant dinner. The salmon is so moist and the cheesy polenta is heaven. The fruit salsa pairs well with the salmon and rounds out the dish to a total meal.

Ingredients
- SALMON
- 4 - 4 oz salmon filets
- - salt and pepper
- 3 tablespoons canola oil
- 1 cup panko bread crumbs
- POLENTA
- 3 cups chicken stock
- 1 cup polenta uncooked
- - salt and pepper
- 4 tablespoons butter
- 1 cup parmigiano-regianno grated
- MANGO SALSA
- 1 - mango peeled and cubed
- 1 cup pineapple diced
- 1 small jalapeno seeded
- 1 medium tomato diced
- 1 medium red onion diced
- - juice of 1 lemon
- - salt to taste
How To Make fried salmon over cheesy polenta with mango salsa

Step 1For the salsa. Dice up all ingredients or pulse in a food processor to make salsa. Set aside in refrigerator to let flavors marry

Step 2For the salmon Sprinkle salmon with salt and pepper. Dredge the non skin side in Panko Get the pan hot and add the oil. Sear the salmon skin side down about 5 minutes until skin lifts from pan. Turn the salmon over and sear the other side about 5 minutes. Turn salmon over again and place in 250 oven to keep warm.

Step 3For the Polenta Bring the chicken stock to a boil. Add the polenta and cook until thickened about 5 minutes. Stir in the butter and cheese and cook until cheese melts.

Step 4To plate Add the polenta to serving plate. Top with a piece of salmon Spoon salsa on top
