Step 1

your choice of fish, i'm using whitings. Season with salt, pepper, paprika, garlic powder, cumin. Fry your fish, i used canola oil.

Step 2

Prepare corn mix, i used Jiffy. Make in cupcake pan. 24 ccorm muffins with 2 boxes of Jiffy.
Step 3

Once you take the corn muffins out, brush with a tsp of butter on top of each one.
