This fried cod with a flavor-packed dry breading cooks up golden brown and crispy on the outside and tender and flaky on the inside. It is always a welcome sight on the dinner table and a big hit with family and friends.

Ingredients

  • 1/3 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 tablespoons cool water
  • 1 1/4 cups Panko bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (I love Kinder's woodfired garlic)
  • 1 1/2 teaspoons Cajun seasoning (preferably low salt or no salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds cod fillets cut into strips or bite sized pieces
  • vegetable oil for frying
  • lemon wedges for serving
  • tatar sauce (optional)

How To Make fried cod

  • Step 1
Pat the cod filets dry with paper towels.
  • Step 2
Set up your breading stations with three shallow bowls. One with flour, one with beaten eggs and water, and the final one with Panko bread crumbs, salt, garlic powder, Cajun seasoning, and black pepper.
  • Step 3
Dredge the cod filets through the flour, then into the beaten egg, and then through the bread crumb mixture, coating well in each bowl.
  • Step 4
Meanwhile, in a large heavy pot like a Dutch oven, heat the oil to 350 degrees. Using tongs, carefully add the fried fish to the hot oil. Fry for 4-5 minutes, flipping halfway through. Cook in small batches, so you don't overcrowd the pot.
  • Step 5
Remove the fried fish to a paper towel-lined plate. Place the plate in the oven on warm while you cook the rest of the cod.
