fresh water bass meuniere
Meuniere is usually made with sole, but I had freshwater bass that we caught in the summer, so I used that.

Ingredients
- 4 bass filets
- salt
- 1 cup all-purpose flour
- 6 tablespoons butter, divided
- 4 sprigs thyme leaves, removed
- 2 tablespoons lemon juice
- 1/4 cup parsley, chopped
How To Make fresh water bass meuniere

Step 1Preheat the oven to 200 degrees F. Season the fish with salt.

Step 2Add half the butter to a skillet. Dredge the fish in the flour shaky off any excess.

Step 3Place in the hot buttered pan and cook for about 4 minutes on each side.

Step 4Remove to a sheet pan and let sit in the warm oven while making the sauce.

Step 5Add the remaining butter to the pan and add the thyme leaves and lemon juice. Cook 1 minute, add the parsley.

Step 6Plate the fish filets and spoon the sauce over each.
