Meuniere is usually made with sole, but I had freshwater bass that we caught in the summer, so I used that.

Ingredients

  • 4 bass filets
  • salt
  • 1 cup all-purpose flour
  • 6 tablespoons butter, divided
  • 4 sprigs thyme leaves, removed
  • 2 tablespoons lemon juice
  • 1/4 cup parsley, chopped

How To Make fresh water bass meuniere

  • Step 1
    Preheat the oven to 200 degrees F. Season the fish with salt.
  • Step 2
    Add half the butter to a skillet. Dredge the fish in the flour shaky off any excess.
  • Step 3
    Place in the hot buttered pan and cook for about 4 minutes on each side.
  • Step 4
    Remove to a sheet pan and let sit in the warm oven while making the sauce.
  • Step 5
    Add the remaining butter to the pan and add the thyme leaves and lemon juice. Cook 1 minute, add the parsley.
  • Step 6
    Plate the fish filets and spoon the sauce over each.
