fluffy salmon patties
My kids don't like fish much, but they will scarf these down. If you do these in a deep fryer, they only take 2 minutes to cook. I had never done them that way until tonight. They are a bit lighter and puffier than those done in a skillet. I think I like them even more this way... so did the kids.

Light and fluffy, we'd call these salmon fritters rather than salmon patties. With an airy texture, they're soft and tender inside, while the outside has a nice crunch. We tried them dipped in a remoulade sauce with a squeeze of lemon, but tartar sauce would be equally delicious.
