fluffy salmon patties
My kids don't like fish much, but they will scarf these down. If you do these in a deep fryer, they only take 2 minutes to cook. I had never done them that way until tonight. They are a bit lighter and puffier than those done in a skillet. I think I like them even more this way... so did the kids.

Ingredients
- 16 ounces can of salmon
- 1 large egg
- 1/3 cup minced onion
- 1/2 cup all-purpose flour
- 2 tablespoons baking powder

Step 1Drain and clean salmon, reserving the liquid.

Step 2Mix salmon, egg, onion, and flour.

Step 3Mix reserved salmon liquid and baking powder.

Step 4Fold it into the salmon mixture.

Step 5Drop by spoonful into hot oil until golden brown.

Step 6Drain on a paper towel.
