Ingredients
- 1 tablespoon butter
- 4 green onions, cut into 1 inch pieces
- 2 tablespoons diced celery
- 2 teaspoons flour
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
- 1/2 cup skim milk
- 1/4 cup swiss cheese, shredded
- 16 ounces flounder fillets
- 1 tablespoon fresh parsley, chopped
How To Make flounder au gratin

Step 1Melt butter in a small saucepan over low heat.

Step 2Add onions and celery; Saute until tender.

Step 3Stir in flour, salt and pepper; Cook 1 minute stirring constantly.

Step 4Gradually add milk; stir well.

Step 5Cook over medium heat until thickened and bubbly, stirring constantly.

Step 6Add shredded swiss cheese; reduce heat and cook until cheese melts, stirring constantly. Set aside.

Step 7Arrange filets in a single layer in a 10 X 6 X 2 inch baking dish coated with cooking spray.

Step 8Pour cheese mixture evenly over filets.

Step 9Cover and bake at 350 for 25 minutes or until filets flake easily when tested with a fork.

Step 10Sprinkle with parsley.
