green onions, cut into 1 inch pieces
2 Tbsp
diced celery
2 tsp
1/8 tsp
1/8 tsp
white pepper
1/2 c
skim milk
1/4 c
swiss cheese, shredded
16 oz
flounder filets
1 Tbsp
fresh parsley, chopped

How to Make Flounder Au Gratin


  • 1Melt butter in a small saucepan over low heat.
  • 2Add onions and celery; Saute until tender.
  • 3Stir in flour, salt and pepper; Cook 1 minute stirring constantly.
  • 4Gradually add milk; stir well.
  • 5Cook over medium heat until thickened and bubbly, stirring constantly.
  • 6Add shredded swiss cheese; reduce heat and cook until cheese melts, stirring constantly. Set aside.
  • 7Arrange filets in a single layer in a 10 X 6 X 2 inch baking dish coated with cooking spray.
  • 8Pour cheese mixture evenly over filets.
  • 9Cover and bake at 350 for 25 minutes or until filets flake easily when tested with a fork.
  • 10Sprinkle with parsley.
