These taste so much better than you may think =) The mangos can be chopped large as in picture or in food processor which is what I do with the salsa all ingredients in food processor. This recipe is from my son who asked me to try them..I asked to have a sandwhich ready incase I did not care for them ...However they were SO GOOD and I have made them for lots of friends who felt the same as I when would ask them to dinner. Needless to say they are always a winner. Another fun dish to surprise people with =)

Ingredients

  • 1 c
    chopped mango
  • 2
    tomatillos peeled and chopped
  • 1/4 c
    onions chopped
  • 1
    habanero, seeds and stem removed, chopped
  • 1/2 tsp
    vegetable oil
  • 1 Tbsp
    tablespoon fresh orange juice
  • FILLING

  • 1
    pound white fish, cooked and flaked (grill on bbq with butter and foil)
  • 1
    small onion, chopped or thinly sliced
  • 1 c
    finely shredded cabbage
  • 1 c
    grated monterey jack cheese
  • ·
    chopped fresh cilantro
  • ·
    vegetable oil, for frying 6 to 8 tortillas

How to Make Fish Taco with Mango Sauce

Step-by-Step

  1. To make salsa place all of the first 6 ingredients in a blender or food processor and puree until smooth.
  2. To make the filling, combine all 4 ingredients listed under the word FILLING in a bowl and toss gently to mix well.
  3. In small skillet, pour in oil to epth of ½ inch, heat, and fry the tortillas for a couple of seconds to soften. Drain and fold in half.
    Stuff each taco shell with some of the filling and arrange on the platter with salsa on the side.
