"Deutche Fusch Rezepte" I was in Koblenz,Germany to visit with my son (in the Air Force)& wife when my first grandson (Mark)was born in 1970. They rented an farm apartment on the 2nd floor of a German family. While there for 1 month, I also enjoyed many German dishes that the landlady & I cooked together. I came back home with many great recipes. This is one of them. She spoke no English & I could not speak German. But, Oh did we have fun..lots of sign language, laughter and beer! Nancy. 9/23/13

Ingredients
- 6-8 medium potatoes, peeled cut in half, cooked then sliced. ... set aside
- 5 slices bacon.cooked & crumbled...... set aside
- 1-1/2 pound fish filets, your choice.....cod is best... i used flounder this time.
- 1/2-3/4 cup flour, seasoned w/ salt,pepper & paprika
- 1 large onions.......chopped or sliced thin
- 3/4 cup water
- 3/4 cup white vinegar
- 1/4 cup white sugar
- 3-4 tablespoons parsley flakes
- 1-???? bottle cold german beer ...a liquid refreshment while cooking over a hot stove.

Step 1COOK POTATOES, set aside to cool. They will be sliced later. In a large skillet fry bacon till brown and crisp. Remove from skillet. crumble & set aside . Reserve bacon drippings.

Step 2Combine flour, paprika, salt and pepper. Dip fish (cut up or fillets)in flour to coat. eat mixture to boiling, stirring constantly. Boil the above for 1 minute.

Step 3Fry fish in bacon drippings, nice and crispy, add oil if needed. set fish aside....KEEP WARM! Keep fried fish warm while cutting up the cooked potatoes. Scrape skillet to loosen any browning bits. Save in skillet.

Step 4Add 1 tablespoon oil to skillet with scrapings and sauté prepared onions. In the same skillet, blend in 1-1/2 tablespoons flour, while gradually adding water and vinegar. Stir in sugar. Then salt and pepper to your taste.

Step 5Stir in cut up potatoes and parsley. Heat. To serve, place potato mixture onto plate, with fish on top or on the side. Sprinkle with crumbled bacon. Brown or crunchy bread a must!

Step 6Pour a beer and enjoy. Next time I will use cod..it is thicker and will hold together better.
