This dish is simple and delicious.

olive oil
3 c sliced onions
1/2 t. paprika
1 1/2 lb fresh fish fillets
1 lemon
1 t. salt
1/4 t.pepper
1/8 t.cayenne
2 large tomatoes,sliced
1/2 lb mushrooms
5 green onions
1/4 c. sherry or clam juice
1/2 c buttered bread crumbs


1Brush shallow baking dish with 1/2 t oil.Heat 3 T oil and saute onions
till transparent season with paprika cook 1 min
longer.Cover bottom of dish with onions.Rub fish with lemon and add
fish over onions and sprinkle with salt,pepper and cayenne.Top with
tomatoes.In a skillet heat 2 T oil saute mushrooms 2-3 mins.Add
Sherry to pan and cook 1 min longer Stir in green onions spoon over
fish Cover loosely with oiled parchment or wax paper and bake at 400
deg 15 mins.Uncover and top with bread crumbs bake 15 mins longer
Allow dish to rest 5-7 mins before serving
