Ingredients
- 2 pounds fresh fish filets
- - flour seasoned with salt and pepper
- 1 - red bell pepper, julienned
- 1 - green bell pepper, julienned
- 2 medium onion thinly sliced
- 5 - garlic cloves
- 1 - tomato, peeled and chopped
- 1 teaspoon peppercorns
- 2 - bay leaves
- 1 - leeks, julienned
- 1/3 cup vinegar
- 1/3 cup water
- 2 - carrots, julienned
- 1 teaspoon sugar
- 1/2 cup olive oil
- - salt and freshly ground pepper to taste
- - lemon juice
How To Make fish escabeche

Step 1Wash fish with lemon juice and rinse.

Step 2Season filets with salt and pepper.

Step 3Dredge into the flour and salt and deep fry in the hot oil.

Step 4When frying the last fish, add olive oil to a pan.

Step 5When hot add the vegetables and cook until the onions are soft.

Step 6Pour in the vinegar, the water and the rest of the ingredients ( taste), bring to a boil and pour it boiling over the fish.

Step 7Bring to a new boil and chill at least 24 hours.
