A few years ago,we went on a family trip to Jamaica and I fell in love with the foods. I love to travel, try the local foods then come home and re-created the dishes, this is my version of a fish dish we had. Most of the time the escovitch was made from whole fish, but at home I use fillets, red snapper is a good fish to use as well.
I added fresh oregano just for the picture.
