Easy Salmon Cakes
1/4 cred pepper, finely chopped
1/4 cgreen onion, finely chopped
1large egg, beaten
2/3 ccrushed cracker crumbs
1/3 cpanko bread crumbs
1/2 tspold bay seasoning
1 can(s)(14 ounces) salmon, drained and flaked
1 Tbsplemon juice
1 tspdijon mustard
How to Make Easy Salmon Cakes
- In a small bowl, combine chopped red pepper, green onion, mayonnaise, lemon juice, Old Bay seasoning, mustard and pepper.
- Stir in egg, well drained salmon and the cracker crumbs. Mix thoroughly.
Divide and form mixture into 6 to 8 balls.
Roll balls in remaining Panko bread crumbs; flatten into cakes (about 1/2 inch thick)
- Fry cakes in 3 tablespoons of melted butter in skillet over medium heat for 3 to 4 minutes per side.
Can be baked in the oven on a baking sheet at 375 degrees for 10 to 15 minutes on each side. or until golden brown.
