Ingredients
- 1/4 cup red pepper, finely chopped
- 1/4 cup green onion, finely chopped
- 1 - large egg, beaten
- 2/3 cup crushed cracker crumbs
- 1/3 cup panko bread crumbs
- 1/2 teaspoon pepper
- 1/2 teaspoon old bay seasoning
- 1 can (14 ounces) salmon, drained and flaked
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon dijon mustard
How To Make easy salmon cakes

Step 1In a small bowl, combine chopped red pepper, green onion, mayonnaise, lemon juice, Old Bay seasoning, mustard and pepper.

Step 2Stir in egg, well drained salmon and the cracker crumbs. Mix thoroughly. Divide and form mixture into 6 to 8 balls. Roll balls in remaining Panko bread crumbs; flatten into cakes (about 1/2 inch thick)

Step 3Fry cakes in 3 tablespoons of melted butter in skillet over medium heat for 3 to 4 minutes per side. Can be baked in the oven on a baking sheet at 375 degrees for 10 to 15 minutes on each side. or until golden brown.
