dad's fried catfish

Dad was a fisherman. This is a recipe we got from a cousin. Its very good, especially with fresh caught fish. The cayenne pepper is optional and Dad never used it but most people seem to like it. Use your own judgement on that according to what your family likes.

Ingredients For dad's fried catfish

  • 2/3 c
    yellow cornmeal
  • 1/3 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    paprika
  • 1/4 tsp
    black pepper
  • 1/8 tsp
    cayenne pepper, optional
  • 1/2 c
    prepared yellow mustard
  • 2 Tbsp
    water
  • 4
    catfish fillets (1 1/2-2 pounds)

How To Make dad's fried catfish

    In a shallow bowl or pie plate stir together cornmeal, flour, salt, paprika, pepper and cayenne pepper (if using). Stir together mustard and water in a small bowl. Spread mustard mixture over both sides of fish fillets, using a knife or spatula. Dip fillets into cornmeal mixture coating both sides well.

    Fry fillets in an electric skillet or deep fryer set at 375 degrees. Cook fillets 3-5 minutes or until fish flakes easily with a fork. Drain on paper towels and serve hot with tartar sauce if you like.
