A very spicy recipe for prawns or other kinds of seafood. An easy dish to make and serve.

Ingredients

  • 2 pounds prawns***
  • 1/2 cup olive oil
  • 2 tablespoons homemade curry powder (link below)
  • 1 medium onion, finely minced
  • 1 cup grated coconut
  • 1/2 cup coconut milk, unsweetened
  • 1/2 - red bell pepper, minced
  • 1/2 - green bell pepper, minced

How To Make curried prawns (sallye)

  • Step 1
    Peel and quarter onion Devein and deseed peppers and cut into chunks Place in food processor and pulse until finely minced
  • Step 2
    Peel and de-vein prawns and set aside (or you can buy already peeled and deveined)
  • Step 3
    In cast iron or heavy skillet, heat oil to medium high When oil begins to shimmer, add onions/pepper mixture and curry powder. Saute until onions are translucent (about 3 minutes) Stir frequently to avoid burning
  • Step 4
    Add prawns to skillet and continue cooking until prawns turn pink (3-5 minutes) Add coconut and coconut milk and cover skillet. Turn heat down to low and simmer until sauce begins to thicken (about 5 minutes) Stir to prevent burning
  • Step 5
    ***You can substitute shrimp, scallops or tilapia cut into bite sized pieces for the prawns
