2 lb
prawns***
1/2 c
olive oil
2 Tbsp
homemade curry powder (link below)
1 medium
onion, finely minced
1 c
grated coconut
1/2 c
coconut milk, unsweetened
1/2
red bell pepper, minced
1/2
green bell pepper, minced

How to Make CURRIED PRAWNS (SALLYE)

Step-by-Step

  • 1Peel and quarter onion
    Devein and deseed peppers and cut into chunks

    Place in food processor and pulse until finely minced
  • 2Peel and de-vein prawns and set aside
    (or you can buy already peeled and deveined)
  • 3In cast iron or heavy skillet, heat oil to medium high

    When oil begins to shimmer, add onions/pepper mixture and curry powder.

    Saute until onions are translucent (about 3 minutes)

    Stir frequently to avoid burning
  • 4Add prawns to skillet and continue cooking until prawns turn pink (3-5 minutes)

    Add coconut and coconut milk and cover skillet.

    Turn heat down to low and simmer until sauce begins to thicken (about 5 minutes)

    Stir to prevent burning
  • 5***You can substitute shrimp, scallops or tilapia cut into bite sized pieces for the prawns
