Love experimenting with salmon patties. I have never made them the same twice. Enjoy!

Ingredients
- 14 ounces can salmon, drain and remove bones
- salt - & pepper to taste
- 1 - lightly beaten egg
- 2 1/2 - 3 tablespoons finely minced onion
- 2 tablespoons yellow corn meal
- 1 1/2 tablespoons buttermilk
- 4 1/2 tablespoons flour
- 1 tablespoon mayonnaise
- 1/2 teaspoon dried dill
- oil - for frying
- OPTIONAL SAUCE
- 1/3 cup plain yogurt or sour cream
- 1/3 cup finely diced cucumber - squeezed of excess water
- 1/8 teaspoon dried dill
- 1 clove crushed, minced garlic
- pinch - or 2 of salt
How To Make ~ crunchy salmon patties ~

Step 1In a bowl, mix salmon, egg, buttermilk, seasoning, flour, mayonnaise, cornmeal and onion. Mix well. I

Step 2In a cast iron skillet, heat about 1/4 cup oil. Drop salmon mixture by tablespoonfuls into hot oil and flatten some with back of spoon. Fry for about a 1 1/2 minutes per side or until desired crispiness. Drain on paper towels. Season with additional salt now, if preferred.

Step 3If making sauce, combine everything, mixing well and keep refrigerated until ready to use. Can double recipe if you want more sauce.
