  • FISH:
  • 4 - tilapia fillets
  • 1 cup panko bread crumbs
  • 1 teaspoon basil, dried
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup milk, skim
  • 1 tablespoon olive oil, extra virgin
  • SAUCE:
  • 6 ounces greek yogurt, plain
  • 1 tablespoon prepared horseradish (not creamy)
  • 1 teaspoon dijon mustard
  • 2 - scallion, chopped (both greens & whites)

How To Make crunchy baked tilapia

  • Step 1
Preheat oven to 450 degrees F. Spray bottom of 13" x 9" pan with cooking spray. Cut tilapia into 4 serving pieces. Place panko in resealable food-storage plastic bag; seal bag & finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • Step 2
In shallow bowl, mix panko, basil, salt & pepper. In another shallow bowl, place milk. Dip fish pieces into milk, then coat with panko mixture; place in pan. Drizzle oil evenly over fish.
  • Step 3
Bake uncovered 10 - 15 minutes or until fish flakes easily with fork.
  • Step 4
Meanwhile, in small bowl, mix all sauce ingredients until blended. Serve sauce with fish.
