Ingredients
- FISH:
- 4 - tilapia fillets
- 1 cup panko bread crumbs
- 1 teaspoon basil, dried
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup milk, skim
- 1 tablespoon olive oil, extra virgin
- SAUCE:
- 6 ounces greek yogurt, plain
- 1 tablespoon prepared horseradish (not creamy)
- 1 teaspoon dijon mustard
- 2 - scallion, chopped (both greens & whites)
How To Make crunchy baked tilapia

Step 1Preheat oven to 450 degrees F. Spray bottom of 13" x 9" pan with cooking spray. Cut tilapia into 4 serving pieces. Place panko in resealable food-storage plastic bag; seal bag & finely crush with rolling pin or meat mallet (or finely crush in food processor).

Step 2In shallow bowl, mix panko, basil, salt & pepper. In another shallow bowl, place milk. Dip fish pieces into milk, then coat with panko mixture; place in pan. Drizzle oil evenly over fish.

Step 3Bake uncovered 10 - 15 minutes or until fish flakes easily with fork.

Step 4Meanwhile, in small bowl, mix all sauce ingredients until blended. Serve sauce with fish.
