Ingredients
- 2 cups fresh broccoli
- 8 - asparagus stalks
- 2 cups spinach
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/4 teaspoons red pepper flakes
- 1/4 cup lemon juice
- 1 pound mahi mahi filets or talapia filets
How To Make crockpot mahi mahi with vegetables
-
Step 1Wash and trim all vegetables and put them into the crockpot. In a small bowl, combine the olive oil, salt, pepper, red pepper flakes and one tablespoon of lemon juice.
-
Step 2Using a pastry brush, brush the fish on all sides with this mixture and place fish on top of the vegetables. Add the remaining lemon juice.
-
Step 3Cook on low for 2 to 3 hours. If you use a thinner piece of fish like Tilapia, check after 90 minutes. Fish is done when it is opaque whitte and flakes easily.
