This recipe was given to me by a friend in Florida.. She used Tilapia and/ or Mahi Mahi. She told me she got the recipe on a trip to Jamaica.

Ingredients For crockpot mahi mahi with vegetables

  • 2 c
    fresh broccoli
  • 8
    asparagus stalks
  • 2 c
    spinach
  • 1 Tbsp
    olive oil
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 1/4 tsp
    red pepper flakes
  • 1/4 c
    lemon juice
  • 1 lb
    mahi mahi filets or talapia filets

How To Make crockpot mahi mahi with vegetables

    Wash and trim all vegetables and put them into the crockpot. In a small bowl, combine the olive oil, salt, pepper, red pepper flakes and one tablespoon of lemon juice.

    Using a pastry brush, brush the fish on all sides with this mixture and place fish on top of the vegetables. Add the remaining lemon juice.

    Cook on low for 2 to 3 hours. If you use a thinner piece of fish like Tilapia, check after 90 minutes. Fish is done when it is opaque whitte and flakes easily.
