creamy shrimp casserole
My mom made this and I thought that she was nuts to mix shrimp & cream cheese. Boy was I wrong! My husband told me that this was one of the best things that I've ever made. For a twist on this recipe, you can add 1 lb crabmeat.

Ingredients
- 1 stick butter
- 1-8oz package cream cheese
- 3 tablespoons butter
- 1 - large onion, chopped
- 1 - small bell pepper, chopped
- 3 - ribs celery, chopped
- 1/2 pound fresh mushrooms, sliced
- 1-1/2 pound shrimp, peeled & deveined
- 1 can cream of mushroom soup
- 1 tablespoon finely chopped garlic
- - tabasco, to taste
- 1 teaspoon white pepper
- 1 cup cooked rice
- 8 ounces sharp cheddar cheese, grated
- - cracker crumbs
How To Make creamy shrimp casserole

Step 1Melt butter in 2 quart saucepan; add cream cheese and stir until cheese is melted. *I usually whisk the melted cream cheese and butter together once the cream cheese is melted.

Step 2In heavy Dutch oven, saute onion, bell pepper and celery in 3T butter.

Step 3Add sliced mushrooms and shrimp and simmer about 5 minutes, stirring constantly.

Step 4Add the melted cream cheese and butter mixture.

Step 5Blend in soup, seasonings and rice.

Step 6Spray a large casserole dish with vegetable spray. Then carefully place mixture in the casserole dish.

Step 7Toss Cheddar cheese and cracker crumbs together and sprinkle over top. Bake at 350 for 30 min, until bubbly and golden brown.
