creamy baked fish fillets

While going through my recipes I updated a favorite one by adding the mashed egg and Old Bay Seasoning. We absolutely love it! Nice to serve for company who enjoy fish. Make some cornbread and serve with corn on the cob along with fresh garden string beans and a healthy salad! Hope you enjoy this as much as we do here.

Ingredients

  • 1 cup sour cream
  • 1/4 cup fresh grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 - hard-cooked egg, mashed
  • 1/2 teaspoon salt
  • 1/8 teaspoon balck pepper
  • 1 - medium tomato, chopped fine
  • 1 - small white onion, minced
  • 2 pounds fish fillets of your choice
  • - paprika and old bay seasoning to sprinkle
  • 2 dashes hot pepper sauce, optional

How To Make creamy baked fish fillets

  • Step 1
    In a medium bowl combine sour cream, Parmesan cheese, lemon juice, mashed egg, salt and pepper, chopped tomato and onion. If using hot pepper sauce, add it now.
  • Step 2
    Mix well with a whisk to blend flavors together. This can be made earlier and kept in refrigerator. I often do this.
  • Step 3
    Grease a very large baking dish. Place fillets in a single layer.
  • Step 4
    Spoon cream mixture over fillets. Sprinkle with paprika and Old Bay seasoning.
  • Step 5
    Bake in a preheated 350 degree oven for 20 minutes or until fish easily flakes.
