creamed tuna on toast
When I need to make a meal in a hurry and the cupboard looks bare, there is always a couple of cans of tuna. My husband loves this quick dinner. His mom made it with cream of whatever soup and when I made it for him the first time with a white sauce he went nuts for it.

Ingredients
- 1/2 cup butter
- 1/2 cup all purpose flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 cups milk
- 2-3 small cans tuna, drained
- 1 cup frozen peas, thawed
- 2-3 large hard boiled eggs (optional)
- 1 small jar pimentoes, diced (optional)
How To Make creamed tuna on toast

Step 1Melt butter over medium-low heat; blend in flour, salt, and pepper. Stir and cook for about 2 minutes, or until smooth and bubbly. Gradually stir in milk while stirring constantly. Continue cooking, stirring constantly, until mixture thickens and begins to bubble.

Step 2Add drained tuna and thawed peas. Add diced hard boiled egg and pimentos if using. Continue heating and stirring until hot.

Step 3Serve creamed tuna over toast, biscuits, or rice. Creamed Tuna recipe makes approximately 6 cups.
