creamed tuna on toast

When I need to make a meal in a hurry and the cupboard looks bare, there is always a couple of cans of tuna. My husband loves this quick dinner. His mom made it with cream of whatever soup and when I made it for him the first time with a white sauce he went nuts for it.

Ingredients

  • 1/2 cup butter
  • 1/2 cup all purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups milk
  • 2-3 small cans tuna, drained
  • 1 cup frozen peas, thawed
  • 2-3 large hard boiled eggs (optional)
  • 1 small jar pimentoes, diced (optional)

How To Make creamed tuna on toast

  • Step 1
    Melt butter over medium-low heat; blend in flour, salt, and pepper. Stir and cook for about 2 minutes, or until smooth and bubbly. Gradually stir in milk while stirring constantly. Continue cooking, stirring constantly, until mixture thickens and begins to bubble.
  • Step 2
    Add drained tuna and thawed peas. Add diced hard boiled egg and pimentos if using. Continue heating and stirring until hot.
  • Step 3
    Serve creamed tuna over toast, biscuits, or rice. Creamed Tuna recipe makes approximately 6 cups.
