crab stuffed cod
Best fish dish I've had in a while, loved the stuffing! Served with cheesy mashed potatoes and broccoli cole slaw. Adapted from cookingwithcbp.blogspot.com.

Ingredients
- 1 tablespoon butter
- 2 - green onion, minced
- 1/2 small red bell pepper, diced
- 1/2 - jalapeno pepper, minced
- 1 tablespoon all-purpose flour
- 1/4 cup heavy cream
- 2 - egg yolks
- 1 tablespoon dijon mustard
- 1 tablespoon fresh chives, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon old bay seasoning
- 1/2 pound lump crabmeat (i used louis kemp imitation crabmeat)
- - kosher salt & pepper
- 1 1/2 pounds cod filet
How To Make crab stuffed cod

Step 1Preheat oven to 400*. Melt butter on medium heat in a 9" saute pan. Add vegetables & cook until soft, about 3-5 minutes.

Step 2Add flour and stir on medium heat until light blonde in color, about 4-5 minutes.

Step 3Stir in heavy cream, then remove from heat.

Step 4In a separate mixing bowl, combine egg yolks, mustard, cayenne pepper, chives and seasoning.

Step 5Slowly add small amounts of vegetable roux to egg mixture, stirring constantly until well incorporated. Mix in crab meat, season with salt and pepper and keep cold.

Step 6Make a small cut into the center of each piece of fish along the length, but don't cut all the way through.

Step 7Season the pieces of fish with salt & pepper. Place 2 tablespoons of filling into the cut on each fish.

Step 8Place on a baking sheet lined with parchment paper and bake 10-12 minutes.
