Best fish dish I've had in a while, loved the stuffing! Served with cheesy mashed potatoes and broccoli cole slaw. Adapted from cookingwithcbp.blogspot.com.

Ingredients

  • 1 tablespoon butter
  • 2 - green onion, minced
  • 1/2 small red bell pepper, diced
  • 1/2 - jalapeno pepper, minced
  • 1 tablespoon all-purpose flour
  • 1/4 cup heavy cream
  • 2 - egg yolks
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon old bay seasoning
  • 1/2 pound lump crabmeat (i used louis kemp imitation crabmeat)
  • - kosher salt & pepper
  • 1 1/2 pounds cod filet

How To Make crab stuffed cod

  • Step 1
    Preheat oven to 400*. Melt butter on medium heat in a 9" saute pan. Add vegetables & cook until soft, about 3-5 minutes.
  • Step 2
    Add flour and stir on medium heat until light blonde in color, about 4-5 minutes.
  • Step 3
    Stir in heavy cream, then remove from heat.
  • Step 4
    In a separate mixing bowl, combine egg yolks, mustard, cayenne pepper, chives and seasoning.
  • Step 5
    Slowly add small amounts of vegetable roux to egg mixture, stirring constantly until well incorporated. Mix in crab meat, season with salt and pepper and keep cold.
  • Step 6
    Make a small cut into the center of each piece of fish along the length, but don't cut all the way through.
  • Step 7
    Season the pieces of fish with salt & pepper. Place 2 tablespoons of filling into the cut on each fish.
  • Step 8
    Place on a baking sheet lined with parchment paper and bake 10-12 minutes.
