Crab Meat AuGratin

1 lb
lump crab meat
1 1/2 c
shredded sharp cheddar cheese
1/4 lb
1 c
finely chopped onion
1/4 c
finely chopped green onion
1 Tbsp
finely chopped garlic
1/4 c
finely chopped celery
1/4 c
bell pepper finely chopped
1/4 c
all purpose flour
1 1/2 c
whipping cream
1 lb
cream cheese
1 tsp
1 tsp
1 tsp
cayenne pepper
1 c
panko bread crumbs
egg yolks, well beaten


1In sauce pan melt butter on medium heat.
2Add onions, green onion, garlic, celery, bell pepper and simmer 5 minutes.
3Add flour a little at a time stirring until all mixed.
4Cook 5 more minutes stirring constantly, make sure no flour sticks; be sure your stove is on low.
5Slowly add whipping cream, stirring constantly until all is added.
6Add cream cheese and blend until melted. Cook until mixture thickens.
7Stir in salt, peppers, egg yolks stir another 1-2 minutes.
8Add panko crumbs.
9Remove from heat and fold in crab meat and half of the cheddar cheese until mixed well.
10Try not to break up lumps of crab meat too much.
11Put in a greased dish and spread remaining cheese on top.
12Bake uncovered at 350 for 20 minutes or until cheese begins to brown.
