Ingredients
- 8 - king salmon fillets (about 8 oz/224 grm each)
- 2 pints fresh blueberries
- 2 teaspoons ginger, minced (10 ml)
- 1 teaspoon garlic, minced (5 ml)
- 1/4 cup balsamic vinegar (60 ml)
- 1 teaspoon brown sugar (5 ml)
- 1 - red bell pepper, minced
- 1 ounce fresh lime juice (28 grm)
- 1/2 cup fresh mint, minced (125 ml)
- - salt and pepper, to taste
How To Make copper river king salmon with berry-ginger salsa

Step 1Salsa: Using a food processor, puree 1/2 the fresh berries. Add whole berries and pureed berries into a mixing bowl.

Step 2Add the rest of the ingredients (except Salmon) and mix well.

Step 3Salmon: Brush fillets lightly with oil.

Step 4Position on broiling pan, and place 4 to 5 inches from heat.

Step 5Broil approximately 11 minutes per inch of thickness.

Step 6Serve with blueberry salsa.
