cod fish cakes

Living in GA I can't find dried salted cod fish, but I made this a lot when I lived up north. I'm a die hard and I will not give up trying. This is how the recipe was given to me, but I change it as I go. The cook time seems long, but it's the different steps that take up the time, but worth it.

Ingredients
- 1 pound dried salted cod fish
- 2 pounds potatoes
- 1/2 - chopped green pepper
- 1 - egg
- 1 medium onion
- 1 tablespoon prepared mustard
- 1 tablespoon mayo
- - salt and pepper to taste
- - parsley
- 2 cloves garlic (chopped or pressed)
How To Make cod fish cakes

Step 1Soak cod fish overnite

Step 2Boil fish about 1 hour

Step 3Peel potatoes

Step 4Drain cod fish and debone

Step 5Put cod fish in pan with potatoes. Cover and cook until potatoes are tender

Step 6Check fish again for bones (just in case)

Step 7Add remaining ingredients and mash while hot

Step 8Form mixture into patties and fry until golden and crisp
