Ingredients

  • 1/2 lb
    unpeeled medium size fresh shrimp
  • 3/4 c
    pancake mix
  • 3/4 c
    beer
  • ·
    vegetable oil
  • 1/4 c
    all purpose flour
  • 1 c
    flaked coconut

How to Make Coconut Fried Shrimp

Step-by-Step

  1. Peel shrimp, leaving tails intact; devein, if desired.
  2. Combine pancake mix and beer in a small bowl; stir until smooth.
  3. Pour oil to depth of 2 inches into a dutch oven; heat to 350 degrees.
  4. Dredge shrimp in flour, shake off excess.
  5. Dip shrimp into batter, dredge in coconut.
  6. Fry, a few at a time, 45 seconds on each side or until golden.
  7. Drain on paper towels.
