unpeeled medium size fresh shrimp
3/4 c
pancake mix
3/4 c
vegetable oil
1/4 c
all purpose flour
1 c
flaked coconut

How to Make Coconut Fried Shrimp


  • 1Peel shrimp, leaving tails intact; devein, if desired.
  • 2Combine pancake mix and beer in a small bowl; stir until smooth.
  • 3Pour oil to depth of 2 inches into a dutch oven; heat to 350 degrees.
  • 4Dredge shrimp in flour, shake off excess.
  • 5Dip shrimp into batter, dredge in coconut.
  • 6Fry, a few at a time, 45 seconds on each side or until golden.
  • 7Drain on paper towels.
