Ingredients For coconut fish with green beans & rice

  • 2
    tilapia fillets (cod or salmon work too or whatever fish you like)
  • 1 box
    fish breading (like shore lunch or whatever)
  • prepared green beans (already washed & trimmed)
  • uncle ben's ready rice (the kind you put in microwave for 90 seconds)
  • brown sugar
  • coconut, sweetened
  • cashews, salted
  • soy sauce
  • butter
  • salt
  • 1 lg
    egg

How To Make coconut fish with green beans & rice

    Scramble one egg & pour into a bowl.

    Mix together equal parts shore lunch, brown sugar & coconut flakes. (i.e. one handful each.)

    Melt 1/2 inch of butter in frying pan on medium heat.
  • 4
    Dip fish in egg than cover with breading, place in frying pan.

    Cook 5 minutes or until cooked through, turn over add 1 pat of butter on each filet & cook about 5 minutes more. Set aside & keep warm. TIP: When it starts to turn white around edges...it's cooking just right!

    In another pan melt 1/4 inch butter, add beans stir until slightly darkened (one or two minutes) add handful of cashews. Stir one minute. Add a splash of soy sauce. Stir one more minute. Set aside.

    Prepare rice according to instructions. (microwave 90 secs.)

    Plate up & enjoy!
