coconut fish with green beans & rice

Ingredients
- 2 - tilapia fillets (cod or salmon work too or whatever fish you like)
- 1 box fish breading (like shore lunch or whatever)
- - prepared green beans (already washed & trimmed)
- - uncle ben's ready rice (the kind you put in microwave for 90 seconds)
- - brown sugar
- - coconut, sweetened
- - cashews, salted
- - soy sauce
- - butter
- - salt
- 1 large egg
How To Make coconut fish with green beans & rice

Step 1Scramble one egg & pour into a bowl.

Step 2Mix together equal parts shore lunch, brown sugar & coconut flakes. (i.e. one handful each.)

Step 3Melt 1/2 inch of butter in frying pan on medium heat.

Step 4Dip fish in egg than cover with breading, place in frying pan.

Step 5Cook 5 minutes or until cooked through, turn over add 1 pat of butter on each filet & cook about 5 minutes more. Set aside & keep warm. TIP: When it starts to turn white around edges...it's cooking just right!

Step 6In another pan melt 1/4 inch butter, add beans stir until slightly darkened (one or two minutes) add handful of cashews. Stir one minute. Add a splash of soy sauce. Stir one more minute. Set aside.

Step 7Prepare rice according to instructions. (microwave 90 secs.)

Step 8Plate up & enjoy!
