Ingredients
- TO MAKE THE ORANGE SALT
- 1 large orange
- 1/4 cup salt
- FOR THE POLLOCK
- 4 skinless pollock filets
- 1 cup breadcrumbs
- 2 tablespoons orange salt
- 2 tablespoons parsley minced
- 4 tablespoons olive oil
How To Make citrus crusted pollock with orange salt

Step 1To make the orange salt. With a peeler. Peel the zest off the orange carefully trying not to get the pith the white part. Place the zest and the salt in a mini food processor and process until mixed well. Set aside.

Step 2Preheat oven 425 degrees. Spray a baking pan. Place the fish in the baking pan. Mix the breadcrumbs, parsley, and orange salt together.

Step 3Press the breadcrumb mixture onto the fish. Drizzle 1 tbsp of olive oil over each of the filets.

Step 4Bake for 10 to 15 minutes until browned.
