Ingredients

  • TO MAKE THE ORANGE SALT
  • 1 large orange
  • 1/4 cup salt
  • FOR THE POLLOCK
  • 4 skinless pollock filets
  • 1 cup breadcrumbs
  • 2 tablespoons orange salt
  • 2 tablespoons parsley minced
  • 4 tablespoons olive oil

How To Make citrus crusted pollock with orange salt

  • Step 1
    To make the orange salt. With a peeler. Peel the zest off the orange carefully trying not to get the pith the white part. Place the zest and the salt in a mini food processor and process until mixed well. Set aside.
  • Step 2
    Preheat oven 425 degrees. Spray a baking pan. Place the fish in the baking pan. Mix the breadcrumbs, parsley, and orange salt together.
  • Step 3
    Press the breadcrumb mixture onto the fish. Drizzle 1 tbsp of olive oil over each of the filets.
  • Step 4
    Bake for 10 to 15 minutes until browned.
