Cayenne dusted scallops with bacon

Dara Corrato

I made this for the first time this past Christmas Eve. I wanted a way to incorporate bacon with scallops without making the traditional bacon wrapped scallop. A new (delicious) recipe was born and I think will become part of the regular rotation.

1 lb
sea scallops
1 pkg
thick cut bacon
3 Tbsp
brown sugar
cayenne pepper
olive oil
salt (optional)

1Cut scallops in half lengthwise. Rinse under cold water. Make sure side membrane is removed. Pat dry on paper towels. Sprinkle with cayenne pepper (use your judgement with the amount depending on the heat level you like) and salt.
2Cut bacon into chunks and cook until crispy. Lightly drain and toss in a bowl with brown sugar until fully coated.
3Heat olive oil in a pan. Cook scallops approximately 4 minutes on each side or until just cooked through.
4Top with bacon mixture.
