cayenne dusted scallops with bacon
I made this for the first time this past Christmas Eve. I wanted a way to incorporate bacon with scallops without making the traditional bacon wrapped scallop. A new (delicious) recipe was born and I think will become part of the regular rotation.

Ingredients
- 1 pound sea scallops
- 1 package thick cut bacon
- 3 tablespoons brown sugar
- - cayenne pepper
- - olive oil
- - salt (optional)
How To Make cayenne dusted scallops with bacon

Step 1Cut scallops in half lengthwise. Rinse under cold water. Make sure side membrane is removed. Pat dry on paper towels. Sprinkle with cayenne pepper (use your judgement with the amount depending on the heat level you like) and salt.

Step 2Cut bacon into chunks and cook until crispy. Lightly drain and toss in a bowl with brown sugar until fully coated.

Step 3Heat olive oil in a pan. Cook scallops approximately 4 minutes on each side or until just cooked through.

Step 4Top with bacon mixture.
