Ingredients
- 2 large cleaned fresh head on rainbow trout
- 2 large 2 garlic cloves minced
- 1/4 cup kalmati olives
- 2 tablespoons capers
- 8 - fresh sage leaves
- 1 medium fresh lemon juice
- 2 - roma tomatoes, deseeded and chopped
- teaspoon red pepper flakes (optional)
- 1/2 - butter, stick
- 3 tablespoons extra virgin olive oil
- - salt and pepper to taste
How To Make brown butter rainbow trout

Step 1brown the butter in a skillet, add olive oil. add minced garlic be careful not to burn. pan fry fish for about 5-6 mins on each side til skin is nice and crispy. add sage leaves and pepper flakes half way thru the cooking. add the remaining ingredients, baste with the butter and oil mixture. fish is done when the flesh is nice and flaky...
