Ingredients
- 4 slices bacon
- 1 medium shallot minced
- 3 cloves garlic minced
- 8 ounces bottle clam juice
- 1/2 cup dry white wine
- 2 cups frozen baby peas thawed
- 3 tablespoons butter
- 4 6 oz cod fillets
- salt and pepper
How To Make brown butter cod with pea coulis & bacon

Step 1In a large skillet add the bacon and cook until crisp. Remove the bacon to a paper towel lined plate. Chop into pieces. Set aside Pour 2 tbsp bacon grease in a small bowl Discard the remaining grease.

Step 2Add the 2 tbsp of bacon grease back to the skillet. Add the shallots and garlic and saute 2 minutes. Add the clam juice and white wine and boil about 5 minutes. Add the peas and simmer 2 minutes. Transfer to food processer and puree. Seaon with salt and pepper. Set aside

Step 3Melt the butter in a skillet. Season the cod with salt and pepper. When the butter starts turning brown add the fish to the skillet and cook about 4 minutes per side basting with the brown butter.

Step 4Transfer the cod to a plate. Add the pea puree to the brown butter and bring to a boil and cook 1 minute. Plate the pea puree and top with the Cod. Sprinkle the bacon over top
