Ingredients

  • 4 slices bacon
  • 1 medium shallot minced
  • 3 cloves garlic minced
  • 8 ounces bottle clam juice
  • 1/2 cup dry white wine
  • 2 cups frozen baby peas thawed
  • 3 tablespoons butter
  • 4 6 oz cod fillets
  • salt and pepper

How To Make brown butter cod with pea coulis & bacon

  • Step 1
    In a large skillet add the bacon and cook until crisp. Remove the bacon to a paper towel lined plate. Chop into pieces. Set aside Pour 2 tbsp bacon grease in a small bowl Discard the remaining grease.
  • Step 2
    Add the 2 tbsp of bacon grease back to the skillet. Add the shallots and garlic and saute 2 minutes. Add the clam juice and white wine and boil about 5 minutes. Add the peas and simmer 2 minutes. Transfer to food processer and puree. Seaon with salt and pepper. Set aside
  • Step 3
    Melt the butter in a skillet. Season the cod with salt and pepper. When the butter starts turning brown add the fish to the skillet and cook about 4 minutes per side basting with the brown butter.
  • Step 4
    Transfer the cod to a plate. Add the pea puree to the brown butter and bring to a boil and cook 1 minute. Plate the pea puree and top with the Cod. Sprinkle the bacon over top
