Ingredients

  • 1 - rainbow trout, cleaned with head and tail on
  • - fresh sage leaves
  • - fresh thyme
  • - rosemary
  • - parsley
  • 1 slice bacon
  • - butter

How To Make brithyll a chig moch (trout and bacon)

  • Step 1
    Wrap the fish in a long rasher (slice) of bacon.
  • Step 2
    Enclose in foil and bake in a hot oven for around 25-30 minutes.
  • Step 3
    Open top of foil and shape like a boat, paint with a little butter and serve with boiled potatoes and plain fresh vegetables.
