bonnie's wild alaskan pink salmon patties
I have made salmon patties all my life, but I have never tried making them with this twist before. Who knew that potato chips would be the star of the show. We really liked the flavor of these Wild Alaskan pink salmon patties. We just kept eating them, but managed to save a couple for fish sandwiches the next day. Ingredients
- 1 can sunkist wild alaskan pink salmon, drained
- 1/2 cup best foods mayo
- 1 large egg
- 1/2 cup dill relish
- 1/2 cup chopped chives
- 1/2 teaspoon coarse black pepper
- 1 teaspoon salt
- 1/2 cup wavy lay's potato chips, crushed
- 2 teaspoon vegetable oil for frying

Step 1Empty the salmon into a calendar to drain.

Step 2Lightly beat egg and mayo together with a fork. Then mix in the dill relish, chives, and seasonings to combine. Add crushed wavy potato chips to form patties. Start with 1/2 cup and adding more crushed chips if you mixture is too wet to form a pattie. Fry in hot vegetable oil until a golden brown on both sides. I make them the size of my palm, which is 8 or 9 patties.

Step 4Serve the patties immediately with tartar sauce. Leftover patties make good fish sandwiches the next day.
