Ingredients
- 4 bass fillets about 4 oz each
- salt and pepper
- cornstarch
- 4 tablespoons vegetable or peanut oil
- 4 cloves garlic minced
- 1 large red chili seeded and chopped
- 1 tablespoon brown sugar
- juice of 2 limes
- grated zest of 1 lime
- cilantro for garnish
How To Make bass fillet with chili lime sauce

Step 1Salt and pepper the fish fillets and dredge them in cornstarch shaking off excess. Cook them in oil until browned and cooked through. Carefully remove them from the pan. Set aside and keep warm

Step 2Add garlic and chilies to pan. Stir fry 2 minutes. Add the brown sugar lime juice and zest and 2 tbsp water. Bring to a boil. Reduce the heat and simmer 2 minutes.

Step 3Serve sauce over fish garnished with cilantro.
