Ingredients
- 1/2 pound fish filets, your choice
- 1/3 cup tequila
- 1/2 cup triple sec
- 3/4 cup lime juice
- 1 teaspoon salt
- 1/2 - garlic cloves, crushed
- 1 tablespoon vegetable oil
- 3 - tomatoes, diced
- 1 - onion, finely chopped
- 1 tablespoon jalapenos, minced
- 2 tablespoons cilantro, chopped
- - sugar, to taste
- - pepper to taste
How To Make barbecued fish margarita

Step 1Place fish in a non-aluminum dish large enough to hold it in a single layer.

Step 2Combine tequila, triple sec, lime juice, salt, garlic and 2 teaspoons of the oil and pour over the fish, rubbing all over.

Step 3Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionall

Step 4Just before serving, combine tomatoes, onions, chilies, cilantro, sugar and salt to taste.

Step 5Heat the grill to VERY hot.

Step 6Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 teaspoon of the oil and grind pepper over the surface.

Step 7Cook on a greased grill for about 4 minutes per side, or until flesh is opaque.

Step 8Meanwhile, boil marinade in a saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little over the fish.

Step 9Spoon some tomato salsa along side and serve.
