This trout dish is excellent served with a fresh-baked traditional Irish Soda Bread.

  • 4
    green onions, sliced
  • 1 medium
    green pepper, chopped
  • 1/4 c
    butter or margarine
  • 1 c
    plain breadcrumbs
  • 1/4 c
    fresh parsley, chopped
  • 1 tsp
    lemon juice
  • 1 tsp
  • 1/4 tsp
    dried basil leaves
  • 4
    drawn, whole trout about 8-oz each (i've occasionally used fillets when that's all i can find)

    salt, for rubbing
  • 12
    cherry tomatoes
  • sprig(s)
    fresh parsley, for garnish (optional)

How to Make Baked Trout, Irish Style


  1. Preheat oven to 350°F. Grease a 13x9-inch baking dish; set aside.
  2. Cook and stir onions and pepper in butter until onions are tender. Remove from heat. Stir in breadcrumbs, parsley, lemon juice, salt, and basil.
  3. Rub cavities of each with salt. Stuff each fish with about 1/4 cup of the stuffing.
  4. Place fish in prepared 13x9-inch baking dish. Bake in oven at 350° for 30 to 35 minutes, or until fish flakes easily with fork.
  5. Garnish with cherry tomatoes and sprigs of fresh parsley, if desired, and serve.
