Ingredients
- 6 pounds dressed carp with head, tail, fins, skin and scales removed
- STUFFING
- 1 quart bread crumbs or cubes
- 3 tablespoons minced onion
- 2 teaspoons ground sage
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 3/4 cup finely chopped celery
- 6 tablespoons hot melted butter
How To Make baked stuffed carp

Step 1Score the fish to break down "Y" bones. Mix all stuffing ingredients well until bread is moistened. Stuff the fish.

Step 2Place stuffed fish on aluminum foil in a baking dish in oven preheated to 500 F. Let brown for 10 minutes, remove and cover carp with bacon slices. Lower heat to 425 F and bake 35 minutes. Add 5 minutes per pound for carp larger than 6 pounds.
