Ingredients
- 3 - medium tomatoes, peeled, diced
- 2 tablespoons scallions, chopped
- 2 tablespoons cilantro, chopped
- 2 tablespoons jicama, chopped
- 3 tablespoons fresh lime juice, divided
- 1 tablespoon jalapeno, minced
- 2 teaspoons ginger, finely chopped
- 4 - snapper filets
- 1 cup dry white wine
How To Make baked snapper with ginger salsa

Step 1Combine tomatoes, onion, cilantro, jicama, 2 tablespoons lime juice, jalapeno and ginger in bowl.

Step 2Cover and let sit for at least one hour.

Step 3Fish: Preheat oven to 425 degrees.

Step 4Place filets in a shallow pan and cover with wine and remaining 1 tablespoon lime juice.

Step 5Cover pan with aluminum foil and bake for 25 minutes or unti fish flakes when poked with a fork.

Step 6Arrange fish on a serving plate and spoon salsa on top.
