Ingredients

  • 3 - medium tomatoes, peeled, diced
  • 2 tablespoons scallions, chopped
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons jicama, chopped
  • 3 tablespoons fresh lime juice, divided
  • 1 tablespoon jalapeno, minced
  • 2 teaspoons ginger, finely chopped
  • 4 - snapper filets
  • 1 cup dry white wine

How To Make baked snapper with ginger salsa

  • Step 1
    Combine tomatoes, onion, cilantro, jicama, 2 tablespoons lime juice, jalapeno and ginger in bowl.
  • Step 2
    Cover and let sit for at least one hour.
  • Step 3
    Fish: Preheat oven to 425 degrees.
  • Step 4
    Place filets in a shallow pan and cover with wine and remaining 1 tablespoon lime juice.
  • Step 5
    Cover pan with aluminum foil and bake for 25 minutes or unti fish flakes when poked with a fork.
  • Step 6
    Arrange fish on a serving plate and spoon salsa on top.
