- boneless, skinless salmon fillets
- 1 Tbsp
- olive oil, extra virgin
- 1 c
- 1/2 to 1 c
- onions, chopped
- panko bread crumbs
- salt and pepper
Place salmon fillets in an oven proof baking dish.
Lightly brush on extra virgin olive oil, both sides.
Season lightly with salt and pepper
Spread onion and mayo mixture over fillets.
Spread panko bread crumbs to cover onion and mayo mixture.
Dot with small pieces of butter all over the top of the panko, which will melt and will brown.
Tip: just before the salmon is done, you can turn on the broiler for a few seconds to achieve a nice golden brown color.
Serve with salad of choice.
