baked halibut with vegetables
This is a Norwegian dish that nice pairs halibut with a crisp white wine and jarlsberg cheese to create a wonderful main dish that's elegant enough for a dinner party.

Ingredients
- 4 - halibut fillets (about 6 ounces each)
- - cooking spray
- 1 tablespoon lemon juice
- 2 teaspoons chopped fresh dill
- 1 cup coarsely chopped tomato
- 1/2 cup sliced green onion (scallions)
- 1/2 cup coarsely chopped red bell pepper
- 1/2 cup coarsely chopped green bell pepper
- 1/2 cup coarsely chopped yellow bell pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded jarlsberg cheese (2 ounces)
- 1/2 cup dry white wine
How To Make baked halibut with vegetables

Step 1Preheat oven to 425ºF. Coat 13x9-inch baking dish with nonstick cooking spray.

Step 2Place fish in the baking dish, and drizzle lemon juice over the fish. Sprinkle the dill on top.

Step 3Gently toss together the tomato, bell peppers, salt and pepper. Spread the tomato mixture over the fish. Sprinkle the cheese on top.

Step 4Pour the wine into baking dish; cover with foil, and bake at 425º for 25 minutes or until fish flakes easily when tested with a fork.
