This is a Norwegian dish that nice pairs halibut with a crisp white wine and jarlsberg cheese to create a wonderful main dish that's elegant enough for a dinner party.

halibut fillets (about 6 ounces each)
cooking spray
1 Tbsp
lemon juice
2 tsp
chopped fresh dill
1 c
coarsely chopped tomato
1/2 c
sliced green onion (scallions)
1/2 c
coarsely chopped red bell pepper
1/2 c
coarsely chopped green bell pepper
1/2 c
coarsely chopped yellow bell pepper
1/2 tsp
1/4 tsp
black pepper
1/2 c
shredded jarlsberg cheese (2 ounces)
1/2 c
dry white wine

How to Make Baked Halibut with Vegetables


  • 1Preheat oven to 425ºF. Coat 13x9-inch baking dish with nonstick cooking spray.
  • 2Place fish in the baking dish, and drizzle lemon juice over the fish. Sprinkle the dill on top.
  • 3Gently toss together the tomato, bell peppers, salt and pepper. Spread the tomato mixture over the fish. Sprinkle the cheese on top.
  • 4Pour the wine into baking dish; cover with foil, and bake at 425º for 25 minutes or until fish flakes easily when tested with a fork.
