baked halibut with vegetables

This is a Norwegian dish that nice pairs halibut with a crisp white wine and jarlsberg cheese to create a wonderful main dish that's elegant enough for a dinner party.

Ingredients

  • 4 - halibut fillets (about 6 ounces each)
  • - cooking spray
  • 1 tablespoon lemon juice
  • 2 teaspoons chopped fresh dill
  • 1 cup coarsely chopped tomato
  • 1/2 cup sliced green onion (scallions)
  • 1/2 cup coarsely chopped red bell pepper
  • 1/2 cup coarsely chopped green bell pepper
  • 1/2 cup coarsely chopped yellow bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded jarlsberg cheese (2 ounces)
  • 1/2 cup dry white wine

How To Make baked halibut with vegetables

  • Step 1
    Preheat oven to 425ºF. Coat 13x9-inch baking dish with nonstick cooking spray.
  • Step 2
    Place fish in the baking dish, and drizzle lemon juice over the fish. Sprinkle the dill on top.
  • Step 3
    Gently toss together the tomato, bell peppers, salt and pepper. Spread the tomato mixture over the fish. Sprinkle the cheese on top.
  • Step 4
    Pour the wine into baking dish; cover with foil, and bake at 425º for 25 minutes or until fish flakes easily when tested with a fork.
