This is a Norwegian dish that nice pairs halibut with a crisp white wine and jarlsberg cheese to create a wonderful main dish that's elegant enough for a dinner party.

  • 4
    halibut fillets (about 6 ounces each)
  • ·
    cooking spray
  • 1 Tbsp
    lemon juice
  • 2 tsp
    chopped fresh dill
  • 1 c
    coarsely chopped tomato
  • 1/2 c
    sliced green onion (scallions)
  • 1/2 c
    coarsely chopped red bell pepper
  • 1/2 c
    coarsely chopped green bell pepper
  • 1/2 c
    coarsely chopped yellow bell pepper
  • 1/2 tsp
  • 1/4 tsp
    black pepper
  • 1/2 c
    shredded jarlsberg cheese (2 ounces)
  • 1/2 c
    dry white wine

How to Make Baked Halibut with Vegetables


  1. Preheat oven to 425ºF. Coat 13x9-inch baking dish with nonstick cooking spray.
  2. Place fish in the baking dish, and drizzle lemon juice over the fish. Sprinkle the dill on top.
  3. Gently toss together the tomato, bell peppers, salt and pepper. Spread the tomato mixture over the fish. Sprinkle the cheese on top.
  4. Pour the wine into baking dish; cover with foil, and bake at 425º for 25 minutes or until fish flakes easily when tested with a fork.
