Ingredients
- 1/2 cup butter
- 1 - garlic clove, minced
- 1 small onion, finely chopped
- 1/2 pound sea scallops, chopped
- - "just a pinch" of salt
- - "just a pinch" of pepper
- - white wine, dry
- - dry bread crumbs
- 6 - flounder filets
- 1/4 cup butter
- 1/2 cup hot water
- SAUCE INGREDIENTS
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- - "just a pinch" of salt
- - "just a pinch" of pepper
- - white wine, dry
How To Make baked flounder with scallop stuffing

Step 1In a 10 inch skillet, melt the 1/2 cup of butter.

Step 2Add garlic and onion and saute until onions are translucent.

Step 3Add scallops and cook 2 or 3 minutes.

Step 4Season with salt, pepper and white wine to taste.

Step 5Add sufficient bread crumbs to prepare a moist stuffing.

Step 6Place each flounder filet dark-side-up on a flat surface.

Step 7Placing the scallop stuffing in the center of each filet, divide evenly among the filets.

Step 8Fold both ends of each filet over the stuffing, overlapping the ends.

Step 9Pour the melted butter and the hot water into a 9x12 inch baking dish.

Step 10Transfer the stuffed filets to the baking dish and bake 20 minutes while you prepare a white sauce.

Step 11WHITE SAUCE: In a small saucepan, melt butter, then whisk in flour.

Step 12Cook over low heat 2-3 minutes, whisking constantly.

Step 13Then add milk, and salt, pepper and white wine to taste.

Step 14Increase heat to medium, whisking constantly until the sauce is thickened.

Step 15Cook several minutes over low heat, stirring.

Step 16When the flounder has baked 20 minutes, pour the white sauce over the stuffed filets.

Step 17Return the baking dish to the oven briefly and heat until the sauce begins to bubble.
