Ingredients
- FISH:
- 2 large tomatoes, seeded & chopped
- 1/3 cup white wine, dry
- 3 tablespoons mint, fresh, chopped
- 4 - tilapia, flounder or sole fillets (about 1 - 1 1/4 lbs)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 thin - lemon slices
- 2 tablespoons butter, unsalted
- COUSCOUS:
- 1 1/2 cups couscous, plain
- 1 1/2 cups water
- 2 tablespoons butter, unsalted
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
How To Make baked fish in wine sauce & couscous

Step 1Preheat oven to 450 degrees F. Coat baking pan just large enough to hold the fish in a single layer with nonstick cooking spray.

Step 2FISH: In medium sized bowl, gently stir together tomatoes, wine & mint.

Step 3Season fish with salt & pepper. Place in prepared baking dish. Pour tomato mixture over fish. Place a lemon slice on each fillet.

Step 4Bake for 17 - 18 minutes or until fish is cooked through & flakes easily when tested with fork. Remove fish to warm serving dish. Whisk butter into pan juices.

Step 5COUSCOUS: While fish is cooking, prepare couscous following package directions, using the weater, butter, salt & pepper.

Step 6To serve, divide couscous amoung 4 plates; top with fish. Spoon sauce from baking pan over couscous & fish.
