Ingredients
- FISH:
- 4 cod fillets
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1/4 cup flour, sifted
- 2/3 cup milk
- 2/3 cup fish stock
- salt & pepper
- 2 large potatoes, wedges
- 1 bunch green onions, chopped
- SAUCE:
- 2 tablespoons tomato puree
- 2/3 cup sour cream
- 2 tablespoons grated horseradish

Step 1Fish: Preheat the over to 350F. Place the fish in a buttered ovenproof dish in a single layer. Sprinkle with lemon juice Melt the butter into a pan. Sift in the flour and cook for 3-4 minutes until lightly golden. stir to stop the flour sticking to the pan. Remove from heat.l Gradually whisk the milke and then stock into the flour mix. Season with salt and pepper. Bring to a boil, stirring, and simmer for 3 minutes, stirring all the while. Pour the sauce over the fish and bake for 20-25 minutes. Check by inserting a skewer in the thickest part of the fish. The fish should be opaque.l Sauce: Blend the puree and horsradish with the sour cream in a small pan. Heat slowly until it bois, then simmer for a minute, stirring. Vegetables: Pan fry the potato wedges and green onions. Serving: Pour the horseradish sauce into a serving bowl and serve alongside the fish.l Serve the fish hot. Serve with the potato wedges and onions.
