Ingredients

4 Tbsp
butter (divided)
1/2
sleeve ritz crackers (crushed)
1 lb
cod loins
juice from 1/2 lemon
1 Tbsp
parsley, chopped
1 Tbsp
chives
1
lemon (cut into wedges)

Step-By-Step

1Preheat oven to 400 F.
Melt 2 tablespoons butter and put into an 11x7 baking dish, coat both sides of cod in butter, then bake for 10 minutes.
2Melt remaining 2 tablespoons butter in a bowl and mix with crushed Ritz crackers
3Remove cod from oven and top with lemon juice and cracker mixture.
Bake an additional 10 minutes or until flaky
4Garnish with parsley and chives. Serve with lemon wedges.
