Ingredients

  • 4 salmon filets
  • 2 tablespoons olive oil
  • salt and pepper
  • 3 cups cole slaw mixture
  • 1/4 cup cilantro chopped
  • 3 tablespoons lime juice
  • 4 10 inch flour tortillas
  • 2 tablespoons olive oil
  • pico de gallo and crema for serving.

How To Make baja salmon burritos

  • Step 1
    Season the salmon with salt and pepper. Add the oil to a frying pan and cook the salmon until desired doneness. Mix the coleslaw mix with cilantro and lime juice
  • Step 2
    Warm the tortillas and line them on the counter. Place a filet of salmon on each tortilla then add the coleslaw mixture. Roll up into 4 burritos. Add the oil to the skillet and brown the burritos folded side down first.
  • Step 3
    Top with pico de gallo and crema
