This is a quick and easy way to enjoy tilapia. Goes great with some wild rice and asparagus.

Ingredients

  • 1 c
    almonds, sliced and divided
  • 1/4 c
    all purpose flour
  • 4
    (6 ounces each) tilapia filets
  • 1/2 tsp
    salt
  • 2 Tbsp
    butter, cold
  • 2 Tbsp
    olive oil

How to Make Almond Crusted Tilapia

Step-by-Step

  1. Process ½ cup almonds in a food processor until finely chopped, and combine with ¼ cup flour in a shallow bowl.
  2. Sprinkle fish with salt, dredge in almond mixture.
  3. Melt butter with olive oil in a large skillet over medium heat. Add fish and cook 4 minutes on each side or until golden brown, remove fillets to serving plate.
  4. Add remaining ½ cup almonds to skillet and cook stirring often for 1 minute or golden brown. Remove and sprinkle almonds on fish.
