Ingredients
- 1 teaspoon canola oil
- 3 ounces ground chicken breast
- 1 clove garlic, minced
- 1/2 cup red bell pepper, diced
- 1/4 cup onion, diced
- 1/2 chipotle pepper in adobo seasoning, chopped (optional)
- 1/2 cup canned crushed tomatoes
- 1/2 cup black beans
- 1/4 cup chickpeas (aka garbonzo beans)
- 1 cup chicken stock
- 1/8 teaspoon paprika
- 1/8 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon oregano, dried
- pepper, to taste
- 1 ounce cheddar cheese, low fat, shredded
- 1 tablespoon green onions (both greens & whites), chopped

Step 1Heat oil in a saute pan over medium high heat. Add chicken & brown for 2 minutes. Add garlic, peppers, onions & chipotle pepper & cook for an additional 3 minutes. Add tomatoes & cook for 1 - 2 minutes. Add beans, chickpeas, chicken stock, paprika, cumin, chili powder & oregano. Stir to combine & bring to a simmer. Lower heat to medium low & simmer for 45 minutes. Season with pepper. Serve in a bowl topped with cheese & green onions.
