Ingredients
- 2 pounds chicken breasts, with skin on (about 4 breasts)
- 2 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- ZESTY PINEAPPLE GLAZE:
- 8 3/4 ounces can pineapple tidbits
- 1 cup brown sugar, firmly packed
- 1/4 cup lemon juice
- 2 tablespoons prepared mustard
- 1 teaspoon soy sauce

Step 1Preheat oven to 375.

Step 2In a disposable 9 inch foil container or baking dish that is freezeable place chicken breasts with the skin side up.

Step 3Brush each piece of chicken with melted butter, then sprinkle with salt and pepper to taste.

Step 4Bake for 30 minutes. Just before chicken is finished baking, make glaze.

Step 5Remove chicken from oven and brush with glaze. Allow to cool completely then freeze.

Step 6On cooking day, remove dish from freezer to thaw. Once thawed bake in preheated 375 oven for 50-60 minutes or until chicken is cooked through and glaze is dark brown.
